American oak is sweeter and contains more vanillin compounds. American oak tends to impart more obvious, stronger and sweeter aromas and flavors. Common descriptors for American oak as well as vanilla are coconut, sweet spices and dill.

French oak is much tighter grained and less dense than the American Quercus Alba. As such French oak imparts more subtle flavours and firmer, but silkier tannins. French oak flavours are considered to be more savoury. Common descriptors for French oak include cedar, tobacco and cashew nut.


Slavonian oak barrels are highly regarded in the wine community; in particular, they're in fashion in Italy's Piedmont region( Barolo). I've heard that—like most wood used for barrels—the oak give more spicy than fruits aromas
